So what’s so special about microgreens?

They contain an immense amount of nutrition in a small package.  Not only are they rich in vitamins, minerals, antioxidants, and phytochemicals, but they’re a low-caloric superfood that have anti-inflammatory, anti-cancer, anti-microbial, and anti-diabetic properties.

In fact, a study by the University of Maryland showed that microgreens harbor 4 to 40 times more nutrients than their adult counterparts.

  • Microgreens are the younger versions of the vegetables and herbs you find at the grocery store. They contain more nutrients than adult vegetables as well as a concentrated flavor profile.

  • Microgreens are a superfood, plain and simple. Studies show they can contain up to 40 times more nutrients than adult vegetables. Microgreens are a fantastic option for chefs and home cooks to add a burst of color and flavor.

  • Microgreens and sprouts are often used synonymously, but are actually very different in terms of growing environment and consumption.

    Sprouts are typically grown in a jar, introduced directly to moisture, and grow in a high-humidity environment. Seeds sprout within 2-4 days. When you consume sprouts, you’re eating the seed and tiny root. Risk of bacteria is greater in sprouts.

    Microgreens, on the other hand, are usually grown in a medium like soil or coco coir. Depending on the variety, microgreens can grow between 7 and 30 days. When you eat microgreens, you’re eating the stem and leaf, rather than the seed and root.
