4 - Thursday - Land and Water Conservation Commission Public Meeting - 7pm, Asheville-Buncombe Technical College, Laurel Building, Ferguson Auditorium. This meeting has been set up by the newly created NC Land and Water Conservation Commission to gather public input on recommendations to the 2007 General Assembly on conservation in NC. All residents are encouraged to attend, whether they speak or not, to support funding for land and water conservation. If you would like to speak, come early to sign up. 13 - Saturday - Chef Ann Cooper Speaks at Malaprop's - 7pm, Malaprop's bookstore, Asheville. Chef Ann Cooper, professional chef and author of "Lunch Lessons: Changing The Way We Feed Our Children," works to transform cafeterias into culinary classrooms for students, one school lunch at a time. She will share her success stories and first hand experience with creating school lunch programs that promote wellness and focus on organic, seasonal and sustainable meals for children. She will speak and sign copies of her book at Malaprop's bookstore.

25 -28 - Southern Sustainable Agriculture Working Group (Southern SAWG) Conference - Louisville, KY. Conference sessions will be held at The Galt House Hotel and Suites, in the heart of downtown Louisville. The conference attracts over 900 farmers and advocates working toward sustainable food systems in the South. In addition to plenty of practical sessions, the conference features field trips to local farms and exhibits by vendors whose products and services provide support to producers. Equally valuable are the personal contacts made by attendees—with 0pportunities to learn and to share with others. Participants will also get a taste of Kentucky with locally produced foods at a special banquet. 1 - 2 - Thursday - Friday - Season Extension and High Tunnels Workshop - Family Central, Jefferson NC. Steve Moore, an accomplished grower in the cold climate of Pennsylvania, will lead this course presented by NC State Cooperative Extension. The course will focus on low-impact, energy efficient techniques to extend the mountain growing season for vegetable and cut-flower growers. 2 - Friday - The Basics of Owning Your Own Vineyard or Winery - 1 - 8pm, Airport Marriott, Greensboro, NC. Presented by the North Carolina Winegrowers' Association, this session is targeted towards North Carolina residents that are considering getting into the wine business. Topics addressed will include the basics of building a vineyard, making wine, running an agricultural business, and selling wine. Registration is $30 and must be postmarked by January 26th 2007. 2 - Friday - Western Region Shiitake Mushroom Workshop - 1 - 3pm, Ray Cort Recreation Park, Burnsville NC. Join NC Cooperative Extension Dr. Omon Isikhuemhen from NC A&T State University, who will show participants how to innoculate logs with shiitake mushroom spawn. 28 - Wednesday - Bridging the Gap: Selling to Food Service and Retail - Charlie Rose Agri-Expo Center, Fayetteville, NC. A day-long workshop for growers and agriculture professionals from Virginia, North Carolina and South Carolina. Registration is $12 for government employees and $25 for all others. 2 - Friday - Northern Piedmont Specialty Crops School - Roxboro, NC. This day-long workshop for growers interested in learning from other entrepreneurial farmers will include presentations on growing and marketing specialty garlic, growing medicinal herbs, integrating agritourism with the farm operation, and using drip irrigation. 3 - Saturday - Southern Appalachian Youth Symposium on Food - Swannanoa, NC. SAY Food! is a student-initiated event for high school and college-age youth in the Southern Appalachians. Students will gather on the campus of Warren Wilson College to raise awareness of the importance of food and local food systems, to create an opportunity for communication between organizations and youth, and to envision possible approaches to further develop local food systems. 3 - Saturday - High Country Growers School and Seed Swap - 9am - 4pm, Ashe Family Central, Jefferson NC. All growers and gardeners are invited to bring a little of what they have grown and saved, and to take some new varieties home with them. Classes will take place throughout the day on topics such as seed-saving and incubating a new generation of young farmers. A class on grafting apple trees will be offered by Ron and Suzanne Joyner at 2pm. Participants can learn successful grafting techniques from these experienced growers and root stock will also be available for sale. The workshop is free and open to the public. The 4th Annual Plant Sale and Flea Market of the Youth Fresh Food Initiative at Buncombe Community School will offer a diverse selection of naturally grown vegetable and perennial transplants grown by Agriculture students. Proceeds benefit sustainable agriculture education and paid agriculture internships on the farm over the summer. Space at the flea market will be available to sellers for $15; contract grown transplants for area farmers will also be available. Then off to his restaurant kitchen, where he will offer a cooking class and allow you to taste his preparations using the fresh market ingredients, some of which will appear on the menu that evening. 6 - Sunday - Farm-to-Fork: A Niche-Based Livestock Marketing Workshop - 9am – 3pm (Local Foods Lunch and Farm Tour Included), Madison County Extension Center, Marshall, NC. Raising livestock, from beef cattle to meat goats, is a familiar farming activity throughout the Carolinas. While many farmers raise meat animals for their own consumption, more of the livestock raised for meat production leaves the region before reaching maturity for slaughter and processing purposes. However, an increasing interest in locally-grown food is driving consumer demand for meats and other farm goods that are raised and marketed directly to local buyers. The response to growing consumer interest poses several challenges for livestock producers, including understanding how navigate the legal requirements, knowing the existing slaughter/process infrastructure, and using direct-marketing methods.
Farm-to-Fork is a workshop designed especially for livestock producers, and speakers will range from marketing experts to livestock producers to retail buyers.
