Fresh at Farmers Markets This Week

Just one more month of indoor winter tailgate markets! If you haven’t checked out what all of the excitement is about, be sure to visit before the end of March. Come see all of the wonderful farmers and other vendors who are making it possible to eat locally grown and produced food all year long!

Looking for a delicious and unique find? Stop by Asheville Fungi (at Asheville City Market) to pick up Lion’s Mane mushrooms. They have a recipe up on their blog for “crab cake”, using Lion’s Mane mushrooms instead of crab.
Creasman Farms (Asheville City Market) and McConnell Farms (YMCA Indoor Winter Market) still have multiple varieties of apples available. Sweeten up any savory dish with a small handful of diced apple, or use them to bake the most delicious dessert after your main meal.
Pea shoots are lovely for dipping. Second Spring Market Garden and Sleight Family Farm have pea shoots at Asheville City Market now, and they go great with chevre cheese from Three Graces Dairy or Roots Hummus (both of which can be found at the YMCA Indoor Winter Market).
There may not be onions at markets this time of year, but Wildwood Herbal (Asheville City Market and YMCA Indoor Market) has spring onions, which can be used as an alternative to regular onions to add flavor, but still keep all of the ingredients in the dish local.
In many recipes, a dish can only reach it’s fullest potential when it incorporates fresh herbs. Visit Jake’s Farm at Asheville City Market to see which fresh herbs they have available this week.
