Thanksgiving is past, and now, what’s next at area farmers markets? After the many hours planning meals, shopping, cooking, and dining, we look forward to December with full bellies. This weekend at markets there are likely to be a few less vendors due to holiday travel, but there are still folks to get your local food fix from. And, now’s the time to give new life to your thanksgiving leftovers.
Give remaining stuffing a makeover by mixing it with eggs from market and frying in patties to make croquettes. You can also do this with leftover mashed or roasted potatoes, sweet potatoes, or any other vegetable side dish.
Utilize every bit of the bird, and make stock from the turkey carcass. Stop by markets this week to get carrots, onions, and celery from farmers.
Tired of turkey? Stop by a farmer selling meat and pick up something totally different than what you’ve been eating: bacon or burgers are about as far from turkey as you can get.
