You can make this dish with any kind of thin noodles, such as spaghetti, ramen, or buckwheat soba noodles.

Ingredients
- 8 ounces (1/2 pound) whole wheat spaghetti
- 1/4 cup soy sauce
- 1/4 cup water
- 2 tablespoons peanut or almond butter
- 2 tablespoons lemon juice
- 1 tablespoon sesame oil (optional)
- 1-2 teaspoon honey or sugar (optional)
- 1 medium cabbage, shredded
- 3-4 medium carrots, shredded
- Salt and pepper
Directions
- Bring water to a boil for the pasta. Cook according to package instructions and drain.
- In a small bowl, whisk together soy sauce, water, peanut butter, lemon juice, and sesame oil and honey/sugar (if using).
- In a large bowl, add pasta and shredded cabbage and carrots. Drizzle with sauce and mix thoroughly. Add salt and pepper to taste. Serve warm or cold.
