Sesame Noodles

You can make this dish with any kind of thin noodles, such as spaghetti, ramen, or buckwheat soba noodles.

Time: 20 minutes

Ingredients

  • 8 ounces (1/2 pound) whole wheat spaghetti
  • 1/4 cup soy sauce
  • 1/4 cup water
  • 2 tablespoons peanut or almond butter
  • 2 tablespoons lemon juice
  • 1 tablespoon sesame oil (optional)
  • 1-2 teaspoon honey or sugar (optional)
  • 1 medium cabbage, shredded
  • 3-4 medium carrots, shredded
  • Salt and pepper 

Directions

  1. Bring water to a boil for the pasta. Cook according to package instructions and drain. 
  2. In a small bowl, whisk together soy sauce, water, peanut butter, lemon juice, and sesame oil and honey/sugar (if using).
  3. In a large bowl, add pasta and shredded cabbage and carrots. Drizzle with sauce and mix thoroughly. Add salt and pepper to taste. Serve warm or cold.
